Left~over Ham!

As I was sorting through the freezer On Crooked Creek this week. . .
I came across a package of Thanksgiving Ham! Hm~m~m...then I found this flyer from our local grocer! "Mr. Ed" and I agree this is a keeper recipe.




So~o~o. . .
put this one in your file for future use when you don't know what to do with the left~over Christmas Ham!


                Hash Brown Potato Quiche

Hash Brown Potato Quiche:

3 cups frozen hash brown potatoes
1/3 cup butter, melted
1 cup cooked ham, chopped
1 cup (4 0z) Cheddar cheese, shredded
1/4 cup bell pepper, chopped
1/4 cup onion, finely chopped
1 jalapeno chili, finely chopped (optional)
2 eggs
1/2 cup milk
1/2 tsp. salt
1/4 tsp. black pepper

Preheat oven to 450 degrees F.
Pat the potatoes over the bottom of an ungreased 9~inch pie plate.
Drizzle the butter over the potatoes, and pat them securely into place.
Bake for 25 minutes. Reduce oven temperature to 350degrees F.



While the potatoes are baking...chop all your fresh ingredients!





Layer the ham, cheese, bell pepper, onion and jalapeno chili
over the baked potato crust.





Whisk the eggs, milk, salt and pepper in a bowl until blended.






Pour over the prepared layers.




Bake for 25 minutes . . .




 or until a knife inserted in the center comes out clean.




Refrigerate any leftovers.
Serves 8.



On Crooked Creek, we served ours with Tropical Fruit Salad and coffee! However, in the future we have decided to add homemade biscuits and perhaps a strip of bacon or two for a festive...after the holidays breakfast!!!



On Crooked Creek , for "Mr. Ed" and I. . .left~overs are simply delicious!

  1. Wow that looks good and so easy. I need to look for some left over ham and hash browns but I'm guessing you could adapt this a bit. Its like a quiche in a way isn't it.

    your room transformation with the tree and CAREFully hung wreaths is lovely. And I like your tribute to snow and snowmen. I wonder if we will get snow here in the south this year. It's always up in the air for debate. Meanwhile we still have pretty mild temperatures. Have a good week!

  2. Yum! Love those hash browns.

    Here's a deelish one ~
    1 pkg hash brown in greased baking dish
    1 pint of 1/2 & 1/2 pour over top
    sprinkle some chopped onions & ham
    cut up 1 cube of butter & sprinkle over the top of the casserole

    bake for 1 hr 30 minutes ~ plus if needed

    1/2 way thru baking I smother it with cheese sometimes
