Dinner Group ~ Salad!

What began as a 4 X 4 Dinner Group in April ~ 
    was actually a 3 X 3 Dinner Group ~
                       commenced this weekend!


"Mr. Ed" and I were asked to bring the Salad!



So~o~o. . .
While watching Pioneer Woman, Ree Drummond made the best looking Salad, which I copied from Food Network. When viewing our local Food Network station, I often copy recipes and stash them away until an occasion arises for something new or different!

Tonight's main dish of lasagna was just screaming g r e e n salad, but with a refreshing twist!
Perfect for an Apple, Pecan and Blue Cheese Salad!


Apple, Pecan and Blue Cheese Salad:

Ingredients:

Salad:
12 oz. Salad Greens (Spring Mix)
1/2 cup dried Cherries
1/2 cup Pecan halves
6 oz. Blue Cheese chunks
2 whole Apples, cored and sliced very thin

Dressing:
1/4 cup Olive Oil
1  Tablespoon (heaping) Dijon
1  Tablespoon Maple Syrup
1  Tablespoon Apple Cider Vinegar (or more to taste)
Salt and freshly ground Black Pepper

Directions:

Add the greens, cherries, pecans, cheese and apples into a large salad bowl.






Mix the olive oil, Dijon, maple syrup and vinegar in a small jar and sprinkle with salt and pepper. Put the lid on the jar and shake well to mix.




Pour a little of the salad dressing over the top of the salad and toss to combine.Taste the salad and add more dressing to taste.

Serves: 8

  4. Love the maple syrup in the dressng -- I always like a "touch" of sweet in my dressings. I adore fruit and nut salads on greens -- especially in winter when all you can get are store tomatoes and croutons are so boring! I must try adding the apple and the maple syrup! Love the jar shaking method as well!
