One Pot Cookin'. . .

One pot cookin'
is one of the best kinds of cookin' I know
On Crooked Creek!!!

















Upon arising this morning on the Prairie,
I found that the temperature
had gone from 58 degrees to 14 degrees!

Br ~r~r~r. . .
that definitely calls for one pot cookin'!











 
I loaded the blue enamelware oven roaster
first with a "Manager's Special" Pork Loin.
Saving $2.50 off the suggested price is my
favorite cut of pork loin, dear ones!

Then I added a half of a head of cabbage,
cored and cut into quarters.
Two potatoes, peeled and cut in half.
Two carrots, peeled and cut in half.
Left ~ over zucchini, cut into half.

Then I added freshly ground salt and pepper,
topped the pork loin with roasted red peppers,
added 2 cups of Chicken Broth
and placed it all in a 350 degree oven for 2 hours. 

Placed on the platter, this one pot cookin'
is truly a feast for the eyes!

















"Mr. Ed" sliced the pork loin for our meal today
and when we finished, he shredded the rest to
save for B ~ B ~ Q Pork with twice baked potatoes
for tomorrows dinner.

As this frigid cold front remains on the Prairie,
one thing is for sure. . .
there will be more one pot cookin' in the oven
On Crooked Creek!
For indeed, I'll be keeping the home fire a burnin'!

  1. Hi Pat! Oh, this looks pretty as well as delish! We could pork loin quite a lot so this is going to become one of my new recipes! Wow! It's mighty gold at your house. We're in the 40s right now and for us it's cold. It's very damp and to the bone cold by the gulf.

  3. Great looking food Pat. I cooked cabbage for the first time on New Year's Day and was so pleased with it. But today on this icy snowy day, I settled for soup and a sandwich.

  4. Oh this looks sooooooo good. I love a one pot meal, I just did a big pot of stew since our temps are in the 20's here. Really cold for the desert. Hugs, Mary

  6. Sounds delish...but brr you can keep that cold front...We are enjoying low 80's in Florida this week and supposed to continue...perfect photography and farm chore weather.

  7. Isn't is funny how cold weather makes you want to cook those comfort foods? I have an enameled roaster too. Actually, I just bought it before Thanksgiving. Your roast and veggies looks sooo good. I'm going to try your recipe in my roaster.

This probably sounds silly, but just the picture of your roast and vegetables all laid out on the platter brought a tear to my eye because my late grandmother would make similar meals all the time (especially in the winter) and take the time to make it look so pretty on the serving platter. I really miss those dinners! She would sometimes call it a "boiled dinner" if she included cabbage like you did. Thanks for the memory!
